Other menus

Autumn additions, two holidays, and Sunday at half past five.

Beside the tasting menu there are three shorter cards: supplements for the season, the two holiday evenings, and a four-course Sunday supper.

The kitchen

Everything is cooked over one wood fire.

Oak for heat, cherry for smoke.

The fire is lit at two and has fallen into embers by half past three. Then the cooks sort it into zones: the grate for the duck, the back for the celeriac, a warm ledge where plates wait thirty seconds and no longer.

Wine and pairings

Sixteen bottles. Five are poured with dinner.

Poured at the pace of the kitchen.

Most of the list comes from growers who farm their own vines, three of them on the North Fork. The pairing is five pours for 85, one for each turn of the menu, and the tea pairing is built the same way for 55.

The whole horseshoe counter set for a private party of twelve, branches in a stoneware jug at the curve, the hearth glowing at the open end.

The family

One family, three rooms.

Paul and Marian Merrow opened Turnspit in Huntington in 1994, with one rotisserie and eleven tables. Their daughter Ada came home in 2025 and opened Sable Room the next spring, in the old watchmaker's shop on Tallow Lane. Seventeen Jewels took the shop's front room this September.

Gift cards

An evening, in an envelope.

145 for one tasting, 290 for two, or any amount. Sent by email on the day you choose, or posted as a letterpress card. They do not expire. One gift card works in all three rooms.
