One cook is hired each January.

This is that job: cook, the cold station, at the front of the counter, where the guest watches you work.

62,000 a year, service included
The day
Prep from 11:00, staff meal at 16:00
The work
Plate two courses in front of the guest: the scallop and the chicory
Starts
January. The kitchen closes February 1 to 14, paid

We look for two years on a line, anywhere, and hands that stay steady when someone is watching. You do not need to have cooked over wood. Sam teaches the fire. Teo, who holds the cold station now, moves to the grate beside him.
