Booking
When does the book open?
Sixty days ahead, at 10:00, for all three seatings. Stools that come back go to the waitlist first, so check the morning of.
How many can I book for?
One to six online. Seven or more is most of the counter, so we treat it as a private evening.
Can I choose my stools?
Yes. The seat map shows every stool for the seating you pick. Stools 1 and 12 sit closest to the fire; 6 and 7 look straight down the counter.
Is there a deposit?
50 a stool, held when you book and taken off your bill on the night.
What if I need to cancel?
Cancel 48 hours ahead and it costs nothing. Inside 48 hours the deposit stays, unless we fill your stools from the waitlist, which we usually do.
How does the waitlist work?
Join it for a seating. When stools open together we text the first party they fit. You have thirty minutes to reply YES before we offer them to the next.
Can I book for tonight?
Until two hours before a seating. After that, call (631) 555-0147. A stool sometimes opens late.
At the counter
How long is dinner?
Ninety minutes. Seven courses arrive in a steady rhythm because they go straight from the hearth to you.
Should we arrive early?
Five minutes before. We start each seating together, so a late arrival joins the menu where the room is.
Is there a dress code?
No. Wear what you would wear to a friend's house for a long dinner. It is warm near the fire, so layers help.
Can children come?
Guests twelve and over. The courses are small and the room is quiet.
Can I take photographs?
Of your plate, yes. No flash, please, and not of other guests.
Dietary
Can the kitchen cook around allergies?
Most of them. Tell us per guest when you book. The prep sheet shows every stool's notes, and the cooks read it at 16:30.
Is there a vegetarian menu?
Yes, with 48 hours' notice. Four of the seven courses change; the sunchoke, the chicory and the burnt honey are vegetarian as they are.
Can you cook vegan?
Not at the counter. The menu leans on butter, cream and fish stock, and a vegan version would be a lesser dinner. Call us and we will talk it through.
What about onion and garlic?
Allium runs through three courses. We can take it out with 48 hours' notice.
I cannot eat celery.
Tell us. The first course is celeriac, and it becomes ember-baked kohlrabi.
Is there a non-alcoholic pairing?
Yes: five pours of tea and ferments, 55. It is built course by course, the same way as the wine.
Private dining
How many can you seat privately?
Eight to twelve: the whole counter.
What does it cost?
There is a minimum spend, from 1,500 for the early counter midweek to 3,600 for a long evening on a Friday or Saturday. The table can go over the minimum, not under it.
How far ahead should we ask?
Six weeks for a Friday or Saturday. Two weeks midweek.
Gift cards
Do gift cards expire?
No.
Can I use one for wine or a private evening?
Yes. The balance comes off the whole bill: the tasting, the pairing, corkage, or a private evening.
How do I check a balance?
Enter the code on the gift card page. It looks like SRG-4K7M-2P9Q.
