On opening night there were sixteen stools at the counter. By the fourth course the cooks were reaching past one guest to serve another, and plates were arriving warm instead of hot.
Twelve is the number where every plate travels less than a meter from the pass to the guest. It is also the number one cook can read at a glance: who has finished, who is talking, who wants the next course now.

We took four stools out on the second night and gave them to a friend's bar in Centerport. The counter has seated twelve since.
